Cooking Steaks in the Snow

Dinner Last Night

Several days ago, Joe brought home 3 steaks from a local butcher shop and they looked B-E-A-utiful! The idea was to marinate them using a Kona Coffee Steak Rub that I brought home from Kauai and then cook them on the grill.  When spring-time in Alaska turned into winter-round-two yesterday, it looked as if Mother Nature was going to thwart our plans — (thwart, such a good word!).  A stubborn, yet brave Joe soldiered on….


….thank goodness because the steaks turned out AMAZING!


It may not look like much, but that little hunk of meat packed some serious flavor!  It was a great meal — I haven’t been eating potatoes a whole lot lately (unless they are sweet potatoes, of course) but these baked potatoes are my favorite!

To make them, stab the potato with a fork many times.  Then, coat the potato with some olive oil and kosher salt and gently rub it into the skin.  Place onto the oven rack at 350 degrees and bake for about an hour or until the center of the potato is cooked through.  The potato skins get really crispy while the inside stays fluffy — so good!  I topped mine with a little Parmesan cheese for some extra flavor.

Today’s Workout

It was Saturday morning so that could only mean one thing — 9am cross training class!  The first 15 minutes of class were spent warming up with some in-place cardio and brief stretching.  We then completed 5 rounds of pretty long plyo, weight training, and body weight circuit.  We ended the class with some core work and even some yoga.

It was a pretty good class — I left there sweating so I guess I can’t complain!


I spent several hours studying today in preparation for my upcoming certification exam.  I am taking the test on June 10th and I am absolutely terrified.  Before I left for Kauai I took the practice exam and I will only say, I didn’t do so great.  Taking the practice exam, though, has shown me what areas of the material I need to return to and study, study, study!

Upcoming Races

I have once again managed to catch race fever and have been looking up all the local events that are coming up.  It looks like there are going to be lots of fun things to do this summer (if we get a summer this year!) and I have my eye on a color run, a mud run (same one I did last year), a 12k, and two half marathons.  I went ahead and registered for the 12k which is coming up on May 31st.

This will be the third time I have run this race and, though it finishes a little “hilly”, I really like the course.  It starts off in downtown Anchorage and the first part of the course takes you through the streets and to an historic part of the city.  I am really looking forward to this race so I hope the weather starts to cooperate around here.
