This weeks paleo meal
Actually last nights meal was also Paleo but I didn’t make it so it doesn’t really count. Let me explain…..
Dinner — April 25, 2013
I have mentioned a few times about my boss who I started running with many years ago and who I ran my first 1/2 marathon with. Since then, she has been off and on with her workouts while I have kept at it for years. In the last several months she has started running again and has decided it was time for her and her family to rethink the way they are eating. She keeps telling me that I have inspired her to take a hard look at her health and to start working towards her goals which makes me feel absolutely amazing.
She is always asking me for suggestions, for workout help, and diet suggestions (diet as in healthy eating, not a short-term restrictive diet) and I am always happy to share what I know. She has made such amazing progress these last few months and has really become an inspiration for me. It’s just a love fest up in here!
She has recently been scanning Pinterest for healthy recipes and has shared several meals with Joe and I. Last night, she sent me home with a heaping serving of Parmesan and herb spaghetti squash with chicken. She tweaked the recipe a little by adding the chicken to it and she somehow managed to eliminate the butter that was called for. Here is how it turned out:
Okay, so not the prettiest meal in the world but it sure was tasty! The spaghetti squash was somewhat sweet which went surprisingly well with the garlic-ey chicken. I made sure to get a copy of the recipe so I am certain this meal will be in regular rotation at our home.
There was a small serving left over which I thoroughly enjoyed at lunch with a big, green salad.
Workout — April 25, 2013
This mornings wake up was much more pleasant than on Tuesday. I had plenty of time to eat breakfast, read some blogs, and enjoy a hot cup of coffee. The first class that I took was pretty good — lots of shoulders, abs, and arms!! The cross training class was good too — we mostly did cardio, plyo’s, and speed/agility drills and intervals.
While I prefer to lift and chuck weights around, I also appreciate the change that comes with these classes — you never know what you are going to be doing when you walk through the door at the gym. Sure keeps things interesting!
Dinner — April 25, 2013
Tonight’s dinner fulfills this weeks “try a new Paleo recipe” goal that I set for the month of April. Tonight’s new recipe comes from the Paleo Slow Cooking cook book that I received for my birthday:
Tonight’s meal is spicy meatballs (I let my boss borrow this book today so I can’t look up the real name of this meal — poor planning on my part!). I was sort of skeptical about this recipe because I was worried that the meat would lose their ball-form (heh!) due to the cooking process but I was pleasantly surprised when I got home and I still had a crock pot full of meat balls.
I also steamed some broccoli and cooked up some brown rice to round out the meal:

I am always a little nervous when it comes time to dish up crock pot meals — there is always the chance that the meal will come out missing some flavor. This meal, however, did not suffer from that problem what-so-ever! I’m not sure how I did it, but I saved the best for last. These meatballs were full of flavor; a little bit spicy, a little bit sweet, and oh so savory!!
Mmmmmmm….balls ‘o’ meat!
The RSVP’s are really starting to roll in which has made this whole wedding shindig all the more real! I have lots of information to put into my excel spread sheet (yup, I am all about the organization) so this is where I am going to have to leave you.
