Let’s rewind a little….

Dinner — April 7, 2013

Joe had planned on making a green chili soup for dinner Sunday night but by the time he was wrapping up at the grocery store, it was too late to start the some-what labor intensive meal.  He grabbed some Parmesan tilapia from the butchers counter and called to tell me to start some brown rice cooking.  Within 20 minutes of him arriving home, dinner was on the table!

It was a bit of a carb fest with the rice and the breading on the fish, but other than that it really was delicious.  I have never had tilapia before so this was a great first experience!  Not to mention it was only about $4 for two servings — can’t beat that!

The fresh vegetables on the side came from a party veggie tray that we made off with after a Saturday night get together!

Workout — April 8, 2013

I was at the gym early yesterday morning.  I felt like getting my heart rate up but didn’t want to slave away on the treadmill so I decided to mix it up a bit.  Here is what I did:

Stationary Bike — 10 minutes

Run — 1 mile (9:26)

Stationary Bike — 10 minutes

Run 1 mile — (8:44)

Stationary Bike — 10 minutes

Run 1 mile — (8:14)

That comes out to be about 50 minutes of straight cardio without the dullness.  Win!

Dinner — April 8, 2013

As you may know, one of my April goals this month is to try a new paleo-ish meal every week for the month of April.  This weeks new meal came early in the week:

It may be a little hard to tell, but this meal is Butter Nut Squash Lasagna.  Instead of noodles, you thinly slice a butter but squash and layer with the sauce/meat mixture just like you would a regular lasagna.

I am torn about this meal — when it is served it sort of just falls into a pile that does not at all resemble lasagna.  That being said, I absolutely loved the flavor!  It was like eating a plate-full of spaghetti sauce without the noodles (as a lover of spaghetti and more specifically, meat sauce, I have often thought of doing just that!) so this meal was right up my alley.  I also loved how many veggies are in this meal: onions, garlic, carrots, zucchini, bell pepper, and of course, the butter nut squash.

Workout — April 9, 2013

There is a body blaster (whatever that means) class from 6-7am every Tuesday and Thursday which is right before the cross training class that we take every week.  I had high hopes that I would make it to that class and then take the cross training class that followed — well, that didn’t happen!

Let’s hope I can get out of bed more easily on Thursday!

Today’s cross training class was a lot of work!  Lots of stair runs, ropes, belly crawls, box jumps, and dead lifts.  We were all pretty beat down by the end of class which was awesome!

I know that I will sleep well tonight and wake up with some sore legs in the morning!
