Paleo(ish) Meatloaf

Dinner — 3.29.2013

For dinner last night, I tried a new slow cooker recipe straight out of the Paleo Slow Cooking cookbook that Joe gave me for my birthday:

Though I do not follow the paleo diet by any means, I am intrigued by it.  Thumbing through the book a few days ago, I was having a hard time deciding which recipe to try first because they all looked so good!  I finally settled on the Fire Roasted Meatloaf.

Growing up, meatloaf was not a common dish in our house so I am not over-the-to crazy about it but after making this dish, I may have to reconsider.  I think my favorite part about this recipe is that you use a 1/2 of a head of cauliflower to bulk up the meat and to add some fiber.

For the most part I was able to follow the recipe as it was written though, I didn’t have the almond flour that the recipe required so I used regular flour instead.  Hence this dish being Paleo-ish.  Either way, I am looking forward to trying more of these slow cooker recipes soon!

Workout — 3.30.2013

This mornings workout was supposed to be a cross training class at the gym, but once again there was confusion as to who was supposed to be leading the class. No one really seemed to know what was going on, so the handful of us that showed up for class came up with a workout of our own.  We completed 3 rounds of a handful of exercises that included treadmill runs, dead lifts, push presses, and jump switch lunges.  It wasn’t a killer workout by any means, but it was neat to come together as a group and push ourselves through this workout.

The rest of the day, so far, has been spent running errands with Joe and then some studying for the both of us at a coffee shop.  After getting home, I absolutely passed out on the couch for an apparent, much needed, nap.

Tonight, I am dying Easter eggs at my parents house (yes, we still dye eggs — ain’t no shame!) and having dinner while I am there.  Any time I can snag a free meal I am all for it!

Note:  As I am rereading this post to make any corrections and edits, I am realizing that this rather short post has taken me over an hour to complete.  I blame this on Miss Congeniality playing on TV — though I have seen this movie a hundred times, I still manage to get sucked into its awkward charms!
