Dinner, Lunch, Dinner.
I gave you a sneak peek at last nights dinner and here it is in all its delicious glory:

So I woke up this morning and guess what — sick again!! WTF? I was on the road to recovery so this cold coming out of no where is so very irritating. Ah well, life goes on.
I had lots to do around the house this morning so I decided to pop in an Insanity DVD for my workout. I did the 40 minute Cardio Power & Resistance DVD. I forgot how much I liked that one and it got me nice and sweaty — bonus!
I had hoped to do a circuit in addition to Insanity but I simply ran out of time. Hopefully I can make up for it tomorrow at the gym.
I was craving vegetables by the time lunch came around so I ended up making an egg and veggie burrito sort of thing:
I scrambled 4 eggs (our eggs were strangely small) with some onion, kale and broccoli. Once completely cooked (no runny egg for me — yuck) I placed it all in a small flour tortilla with a little bit of cheese. I actually had to split everything in half because it wouldn’t all fit in a single tortilla — ain’t nothing wrong with leftovers.
I have home-made chicken soup cooking on the stove so I am looking forward to a relaxed evening in front of the TV. Ah crap, I still have dishes to do….grrrrr!
